    Squirrel Sauce Piquante

    2 Squirrels
    1/2 c Bell pepper, chopped
1 cn Tomato sauce (8 oz.)
    Cooking oil
    3 Med. onions, chopped
    1 tb Flour
    Water
    Black & red pepper, salt

Rub squirrels with salt, black and red pepper. Put oil in heavy iron pot 1/4" deep. Brown squirrels on all sides and remove from pot. Lower fire to med. heat and saute onions, bell peepper and flour in remaining oil until brown. Place squirrels back in pot, add enough water to cover meat. Add tomato sauce. Cover and simmer on low fire 1 1/2 to 2 hrs., or until tender.

That's a good question. Normally I'd say a Chianti is Italian pi...erm, might drown the subtle taste of squirrel. Like rabbit, the taste is easily overpowered. But since we are preparing the squirrel spicey - much of it's soft texture having been lost by running it over, so a more robust preparation is in order - a stronger wine might not be inappropriate. Worth a try!

Same here. Where I am, we have these little creatures called "prairie dogs."

A nice full bodied red would be my choice. A bergundy perhaps. Or you could eschew convention all together and plump for a nice dry white. If so, a sautern would be acceptable.
There are times I wish they’d just ban everything- baccy and beer, burgers and bangers, and all the rest- once and for all. Instead, they creep forward one apparently tiny step at a time. It’s like being executed with a bacon slicer.

Gotcha (good point) - MD2020 makes picking out the bits of asphalt a fun occupation, instead of a drudgery chore.
